You don’t have to master every kind of cuisine in order to call yourself a good cook — you just have to nail down a few simple meals that you can make consistently.


If you’re looking for simple meals, you’ve come to the right place. It gets plenty hot in CoMo in the summer, which is why we’ve come up with a list of recipes that are light on both your stomach and your wallet. These simple summer salads won’t weigh you down, so you can enjoy your meal and get back out to the pool, volleyball game, or whatever else you were doing to enjoy some summer sun.

Refreshing Watermelon Salad


First up on our list is a salad that can pair perfectly with grilled meat or a picnic in the park. The secret to creating this delicious dish is to add plenty of fresh cilantro. It’s worth it to go to a high-end grocery store and buy quality cilantro before you dive into this recipe. Also, be sure to cut the watermelon into big chunks so that it doesn’t fall apart in your salad!

  • Red Onion
  • Watermelon
  • English Cucumber
  • Feta Cheese
  • Fresh Cilantro
  • Sea Salt


Strawberry Melon Summer Salad


Fruit salads are the most refreshing things you can serve on a hot summer day. We recommend investing in melon baller before making this salad, because it’ll make the whole process that much easier.


Here’s what you need to grab before you can get started:


  • Lemon Yogurt
  • Honey
  • Lemon Juice
  • Watermelon Balls
  • Cantaloupe Balls
  • Fresh Strawberries


Tomato, Basil and Feta Salad


Light summer salads are best paired with a light dressing, and that’s exactly what you’ll enjoy with this tomato and feta salad. The dressing is mostly based on lime juice, which is about as light as it gets. Be sure to use plenty of salt and pepper when making this salad! Tomatoes are delicious when you add salt, and the basil and feta combo will create a delightful medley of flavors.
